Why you should make this recipe
We shouldn't make fudge just for the holidays. It is decadent, super easy to make, and can be enjoyed with family and friends. On top of all these advantages, fudge IS delicious!
It is such a simple recipe and so versatile! When you make fudge, you can basically add anything your heart desires while that chocolate is melting, from nuts to marshmallows to white chocolate or coffee. The sky is the limit!
This recipe of Pistachio Cranberry Marshmallow Fudge has it all: different textures, the right sweetness, and it looks gorgeous, which in my opinion, is a good thing. If you wrap it in a cute box, fudge could be a wonderful Thanksgiving or Christmas gift. Who doesn't like a sweet treat around the holidays?

Ingredients you need
- Semisweet chocolate chips- try to use the best quality of chocolate you can get
- Mini marshmallows
- Sweetened condensed milk
- Vanilla extract
- Pistachio nuts
- Dried cranberries
- Optional: replace cranberries with tart cherries if you like them better
- Also, walnuts or chopped pecans work well too.
How To Make Pistachio Cranberry Marshmallow Fudge
Step 1. Line a square pan, 9x9x2 inches, with aluminum foil. Grease foil with butter.
Step 2. Place chocolate chips and condensed milk in a medium bowl on top of a water bath, making sure the bottom of the bowl doesn't touch the simmering water underneath. Melt the chocolate, stirring every minute, until smooth. Stir in vanilla, marshmallows, nuts, and cranberries.
Step 3. Immediately pour into the pan. Sprinkle chopped pistachios on top and refrigerate for about 2 hours or until firm. Remove the fudge from the pan, using foil edges to lift. Cut into nine rows by eight rows, or cut into diamond shapes.

This recipe can use mini marshmallows or regular ones. If you use the regular ones, just cut them into small pieces. After all, make this recipe yours and enjoy it!
Fudge is considered candy, and candies have a high percentage of sugar and very low moisture, which means they do not spoil very fast. If you make and store it properly, you can use it anytime you need to make or bring a treat. Fudge is a perfect treat to make in large batches, just for gifting.
It will last several weeks in the refrigerator tucked in an airtight container and about two weeks at room temperature. Ensure that it is not exposed to the environment and stays inside a container so it doesn't dry out. Getting dry is one of the reasons we usually throw the fudge away.

i just made this and the fudge is really soft any ideas to make it harder shoul i add more marshmallows i had doubled it and even used 2 12 oz cans of evaporated milk instead of 2 14 oz cans thanks

My recipe doesn't have evaporated milk. It has condensed milk, which is very different. These two are not interchangeable. Here are some ideas on how to fix it:
More Chocolate Chips: This will help thicken the mixture. Since the recipe is doubled, consider adding an extra cup or two of chocolate chips.
Add Dry Ingredients: Consider adding more marshmallows, or perhaps some powdered sugar or cocoa powder to help absorb the excess liquid.
Freeze Instead of Refrigerating: Freezing might give it a firmer texture, though it may soften again when returned to room temperature.
